  • Parsley has an association with death. The ancient Greeks were of the opinion that parsley came from the blood of Ophelets, whose name means forerunner of death. Presenting winners at "funeral games" and athletic games with parsley crowns in honour of the deceased. In need of parsley, the saying meant that someone was so ill that they were expected to die.
  • The Tudors believed that parsley would cure baldness.
  • The Romans wore parsley to ward off evil spirits.

Apiole: (parsley-like and herbaceous) Apiole is the main compound found in the oils of parsley. The apiole of parsley is also found in celery leaves. There are 45 different flavour compounds found in parsley oils. Although it is unique in taste, these different flavour profiles complement many other spices and herbs. Nutmeg and parsley both hold the myristicin compound.
